Chili sin carne

Easy food for easy days. Delicious with rice, tortilla chips, a mountain of coriander and of course lots of guacamole.
Ingredients (4 persons)
- 1 onion (chopped)
- 2 garlic cloves (cut into mini pieces)
- 1 bell pepper
- 1 tbsp cumin
- 1 tbsp dried cilantro
- 1 tbsp chili powder
- ½ tsp cayenne powder
- ½ tsp cinnamon
- ½ tsp oregano
- 1½ tin kidney beans (not in sauce!)
- 1 cup corn
- 2 cans (400 ml) sieved tomatoes
- 1 can (140 ml) tomato puree
- salt to taste
- fresh cilantro
- 1 bag natural tortilla chips
- 2 avocados
- 1 lemon
- 1 tsp garlic salt (available at the Asian supermarket)
- 400 grams rice (of your choice)
Directions
- Sauté the onion in a pan for about 8 minutes.
- Then add all the herbs, garlic and bell pepper (diced) with a small splash of water.
- After one minute add all other ingredients. Note: you have to mash the sieved tomatoes a little in the pan.
- Cook for 15 minutes. Meanwhile, make the guacemole. (see instructions below)
- Spoon onto plates and serve with the fresh rice, guacamole, fresh coriander and tortilla chips!
Guacemole
- Peel and stone the avocados and put them in the food processor.
- Squeeze half a lemon over the avocados and add 1 teaspoon of garlic salt.
- Run the food processor until it is smooth.
